Why isn't the move back the same percentage?

A 20% fall from 100 to 80 needs a 25% rise to get back, because the second percentage is measured from the smaller number. The calculator shows both.

What is the symmetric difference?

The absolute difference divided by the average of the two prices. It does not depend on which price you call A, which makes it useful for comparing two quotes.
